Cumarin - If you use cinnamon or mahlep pay attention

Cumarin is a substance that is naturally contained in food ingredients and it gives them an aromatic quality.

If you use cinnamon and/or mahlep in the production of ready-to-consume food products, you are required to control the amount of cumarin in the final product. The determination of the ammount of cumarin in a food product is achieved by performing a lab analysis.

In accordance with European Union Regulations, there are upper limits in the concentration of cumarin contained in ready-to-consume food products, which must be followed by the producer, in order to maintain public health.
